Roasted Balsamic and Parsley Mushrooms

I love mushrooms. They are great as side dishes or inside many dishes or even as toppings to meats such as steaks, burgers or sausages.

Ingredients:
Mushrooms (sliced lengthwise)
Olive oil
2 cloves or garlic
2 tablespoons Balsamic Vinegar
Sm bunch of fresh parsley(chopped)
Salt/Pepper to taste

Slice mushrooms lengthwise. Crush and mince some garlic and preheat olive oil.

Once you smell the garlic throw in the mushrooms, so that the garlic does not burn.

Once the mushrooms are nice and soft and 3 tablespoons of balsamic vinegar, toss and take off the heat, add the parsley.

Toss and Serve just as is.

You can top with some grated Parmesan and or garlic powder.

Oven Roasted Tomatoes - so easy breezy!

This is a great recipe for a base to a tomato sauce or for a great healthy side. I also like to do this if I have any tomatoes that need to be used up before they go bad, as the roasted will last another week easily in the fridge.

Ingredients:
Tomatoes
Olive Oil
Oregano
Garlic Powder
Salt/Pepper

I happened to have grape tomatoes on hand but you can use any from the large (sliced) to the little cherry tomatoes. I use my kitchen shears they are great for tons of kitchen chores.

I used my kitchen shears to cut them but a regular knife is fine too.

Line the cookie sheet with foil, sprinkle on olive oil and seasonings to taste.

In a pre-heated oven of 350 degrees roast for 25-30 minutes.

They come out yummy and sweet.

Great for pasta sauces or as a side for any meat dish esp steaks or roasts. Toss with some grilled asparagus is amazing too for a bbq.

Product- Review: Mandoline, A Veggie Eaters Dream

I love this little kitchen gadget. I bought it on Amazon with free Prime shipping for under $16!

Even though it is plastic it is surprisingly strong and it came with several attachments.

This is the slicer attachment. The slice thickness can be set up and down.

It is incredibly easy to switch out the attachments.

There are 2 knobs like this. One sets the thickness of the cut, the other sets the hight of the whole mandolin.

Easy to use, slicer is set to regular flat slicing.

Comes with a gripper for the item you are slicing so that you  protect your fingers. This part will also convert to a juicer (see below).

Just run the item thru the chosen slicing attachment.

See? Easy breezy even slices.

Using the shredding attachment......

Shreds evenly for slaws, salads, soups, etc.

This is the rippled attachment for crinkly veggies or potato chips.

As mentioned earlier  this gripping attachment converts to a juicer.

You can juice citrus fruits such as fresh orange, lemon or lime juices.

Nothing to assemble. All you have to do is choose the slicing attachment. Easy to clean; dishwasher safe.

Folds down for minimum space.

Great to make potato chips, scalloped potatoes, slice veggies for platters. Or shred a multitude of fruits and veggies.

Great product! Small investment!

Lemon Parmesan Oven Roasted Mushrooms

These oven roasted mushrooms are so delisious and so "easy breezy!" I bought a huge container at Costco for about $6.

Prep time 10 min. Cooks in the oven in 15-20 min!

Ingredients:
2-3 cups of mushrooms
Parmesan Cheese
1/2 lemon and zest(optional)
2-3 tablespoons olive oil
salt/pepper to taste

Slice the mushrooms lengthwise.

In a bowl, squeeze the half lemon Discard any seeds. And grate a little zest into the juice (optional).

Add the Parmesan cheese, olive oil and rosemary into the bowl.

I used the bigger chucks by the Frigo brand (any grocery store). Powdered Parmesan or preferred cheese is fine too.

Preheat the oven to 350 degrees.

Mix the mushrooms into the bowl and put in the backing pan.

Sprinkle extra cheese on top and bake for 15-20 min.

Fabulous!
