These breakfast cups in muffin tins are so easy and quick. You can put just about anything into these cups. Any veggie, cheese or meat you like. You can use bacon, sausage, meatballs, Canadian bacon, ham, salami, etc.
I am using spinach in most but have bacon in a few of the cups since I had some left over from the BLTs last night. (See best BLT's ever recipe.)
Ingredients:
3 whole eggs
1 1/2 cups spinach chopped/preferred veggie
Any meats if you like
2 teaspoons milk (optional)
garlic powder
salt and pepper to taste
Preheat oven at 375 degrees. Spray the muffin tins with a cooking spray.
Break the eggs into a bowl and mix well. Season to taste. Add the 2 teaspoons milk (optional) It makes the eggs a little puffier and creamier, but will cook fine without it if you are restricting your dairy.
Put your veggies and meat of preference into the pre-greased muffin tins.
Pour the egg mixture into the muffin tin about 3/4 full, they will puff up when they cook.
Cook in the oven 25-30 min at 375 (ovens may vary). So keep an eye on them after about 20 min.

When done in the middle then they are done. You can use a toothpick in the center. If it pulls out dry, then they are ready. Turn off the oven.
Top with some reduced fat shredded cheese and stick in the warm (turned off oven) for a few minutes to let the cheese melt.

Serve like this with fresh fruit for a great brunch or breakfast treat.
You can also put in between English Muffins or cut up and put in a tortilla and it makes a great quick run out the door breakfast in the am. They heat well. Just a min in the microwave.
